Description

This tool is the mifrak, also known as a wooden whisk or batter whisk. It’s a traditional hand-held kitchen utensil primarily used in Sudanese and Egyptian cuisine.

Main Uses: Its most common use is for preparing okra. It’s used to mash and blend cooked okra pods until they become smooth and thick, resulting in a dish known as “mafrouka” (mashed okra).

Multiple Uses: In addition to okra, the mifrak is used to mash various dishes such as lentils, knead dough, and churn liquids like yogurt.

Design: It consists of a long handle and a distinctive base with protruding wooden pegs.

The cook holds the handle between their palms and rubs them together to quickly rotate the mifrak inside the pot.
